Chef Joe

Yesterday, Joseph woke up with the ambition to create his own sauce. He wanted to make a vegetable sauce for pizza that wasn't tomato based. Here is a documentary of Joseph's cooking adventure last night. (I only took the pictures and enjoyed the finished product, Joseph did all the inventing and cooking himself, without, might I add, any previous cooking know how.)

Since Joseph was the inventor he named it Kristi Pizza. It consists of a cornbread pizza dough (he used this recipe here), Joseph's Zucchini Sauce, mozzarella cheese and dried basil.

Step 1: dice green, red and orange bell peppers. Place in a pot with enough water to cover the bottom. Simmer on medium heat.

Step 2: dice fresh garlic. (Don't be afraid to put a lot in. I was nervous about the amount Joseph added, but we could hardly taste it.) Add to pot.

Step 3: dice one tomato. Add to pot.

Step 4: peel and dice 2 zucchini. Add to pot.

*Make sure you remember to stir occasionally and add additional water as needed.*

Step 5: blend the vegetables in a blender.

Step 6: make the pizza dough. We did not have any olive oil and so we used vegetable oil instead. This made me a little nervous, but the crust turned out great.


Step 7: Joseph decided to make small individual pizzas instead of one big pizza.

Step 8: grate the mozzarella cheese (or buy pre-grated cheese.)


Step 9: put the pizza together. Joseph layered the dough with the sauce, then cheese, then added some dried basil on top.
Step 10: cook at 375 for about 15 minutes. (This was the hardest part - trying to decide what temperature to cook the pizzas at.)

Last Thursday, Kristi had to go to the hospital to get tested for gestational diabetes (a routine procedure). Part of the test requires you to drink an orange soda type drink. It was really awful! Yuck! Later that night Joseph told me that he was going to create a drink for me to try. I wasn't allowed into the kitchen and he would give me no clues as to what was going inside. But he then presented me with a delicious Peanut Butter Banana and Chocolate Milkshake. It was great, and much better then the forced "orange soda" I suffered through earlier.

Ever since then, I've been wanting another. Last night, Joseph made it for me again. What a cook!

Step 1: gather the ingredients shown below.

Step 2: cut the banana and then mix all together.

Step 3: give it to somebody you love!

Sounds like Joe is taking good care of you! The orange soda test is pure nastiness I'm glad you could follow it with a better tasting drink later.

Joe can help us make the pizza from my blog and we HAVE to go to Pinkberry because you'll definetly be adding that to your top reasons to go to California list. Yes, we should just eat while your here!! Fun...I've only gained 20 lbs since I had Jordyn...Super Fun
